My free public workshop this Saturday digs into lentil varieties and ways to cook, spout, and ferment them for everything from spiced dips to full meals. Get lentil recipes at TwiceasTasty.com.Lentils are the ultimate tiny seeds with a big impact. Dried lentils don’t need to be soaked before you cook them, making them easier to prepare than larger dried beans—although once you’re hooked on lentils, you’ll soon be digging into other dried beans too. The various lentils have subtly different flavors but are mainly distinguished by colors and textures that make some better suited for purees and quick dips and others ideal for salads and crispy garnishes.
