
Last week was a busy one, so I’m a bit behind in sharing the latest recipe in my Twice as Tasty column for the Flathead Beacon. It’s another easy meal made with grilled sweet peppers and grilled vegetables, which I featured heavily last month. These Grilled Pepper Pancakes, and other savory pancake recipes, pair well with a topic that had much of my attention last week: pickles.
Pickling cucumber season is winding down, so I was excited to bring several pounds of a locally grown variety to my workshop at Columbia Falls Library and let people fill jars with sliced cucumbers and their choice of brine and seasonings for refrigerator pickles. I’ll be busy teaching many more workshops through the end of the year—not just privately hosted workshops but also several at Flathead Valley Community College through its Continuing Education program. Many of the FVCC cooking workshops for the fall semester have already sold out, so sign up soon if you want to get in on the fun.

Twice as Tasty
Admittedly, I think pickles go well with loads of meals. That viewpoint is part of the reason I included a whole chapter in my pickling cookbook on quick pickles, many of which can be made as a side project while you’re preparing dinner and then enjoyed with the meal. You might start a dinner of homemade sushi with Sunomono or another quick cucumber pickle. Spring Asparagus Pickles might land on a bed of greens or alongside an omelet at lunchtime. When you have too many avocados to use before they overripen, pickling them stretches out their storage life before you use them as a burger garnish or the main ingredient on avocado toast.
When it comes to pairing pickles with savory pancakes, I often wrap the pancakes around Ripe Cherry Tomato Pickles or Zucchini Escabeche or tear off bites to dip into my Corn and Chile Pickle recipe, much like using injera to scoop up stews when eating Ethiopian meals family style. Carrot and Daikon Radish Pickles, pickled Bell Pepper Slices, and Miso Asazuke (Quick Miso Pickle) are some of my other favorite pickled toppings for savory pancakes.

You can also make savory versions of Huckleberry and Cheese Crepes or Overnight Sourdough Pancakes. Then there are Red Lentil and Basmati Dosas, who’s fermented tang makes a delicious base for savory meals. You can find more pancake recipes in the recipe index.
