When I was asked to test an array of garlic presses last year, I hadn’t expected to keep any for my own kitchen. I grow and use piles of garlic; I’m just comfortable rock-chopping it for Sourdough Garlic Knots, slicing it for Spanish Shrimp in Garlic Oil, and roasting and squeezing it onto everything. When I owned a garlic press, it just took up space in my utensil drawer, sitting unused far too long before I gave it away.
Then, when I’d finished testing garlic presses, the look, feel, and easy use of the Joseph Joseph Garlic Rocker made it hard to give up. Twice as Tasty
The Joseph Joseph Garlic Rocker is far more versatile than I anticipated. I use it not just to mince fresh garlic but also to turn roasted garlic into a paste without getting my fingers so messy. It can mince other small foods too, like pitted olives, capers, shallots, ginger, chipotles in adobo, and anchovies.
My most surprising discovery was how it easily broke up egg yolk for deviled eggs. I’ve always enjoyed these as a party treat, but I became hooked on pickled eggs when I was writing The Complete Guide to Pickling, and I included two recipes for them in that book (you can find one of them here). Then, because I couldn’t decide on a favorite flavor, I gave four ways to make Deviled Pickled Eggs in The Pickled Picnic. With a ready-to-eat stash of pickled eggs in my fridge and a garlic rocker in my hand, deviled eggs are no longer a short-lived party treat and have instead become an easy snack for one.
