As the growing season winds down, I get plenty of questions about what to do with the last weeks of homegrown harvests and the last crops from farmer’s markets. By now, you’ve likely eaten your fill of your favorite fresh dishes and processed your favorite canned and frozen goods. If you’re like me, you’re torn between wanting to be done with the labor of weeding and harvesting and wanting to capture those last few tomatoes, those last few broccoli stalks, to enjoy after snowfall.

I’ve already shared many of my favorite ways to save excess and end-of-season produce. This month, I’ll continue to share some of my favorite fall canning recipes. But this week, I wanted to bring together in one post some of the ways I quickly save the last rounds of in-season veg.

Fresh Fillings

If you grow a giant garden, each day’s harvest fills multiple boxes and baskets and then every spare corner of your refrigerator. But if you grow a more reasonably sized garden, your harvest likely comes in dibs and dabs: a couple of cucumbers and tomatoes, perhaps a pepper, a small mound of greens, a handful of herbs. Combining these garden-fresh favorites into a meal that showcases your effort often means coming up short for a standard recipe.

This is why I love fillings and stuffings; the ingredients are endlessly variable, a little goes a long way, and the result is a sparkling-fresh meal that highlights produce just off the vine. Whether you’re filling summer rolls, stuffing squash blossoms, or even building Grilled Fish Tacos, the key is to use less filling than you think you’ll need. A gentle hand while wrapping delicate rice paper or petals around that filling is also essential for success.

Freezing Herbs

If I could have only one garden, it would teem with herbs. Many of these easy-to-grow plants survive any climate or soil and are among the first shoots to appear each spring. Most are either perennials that return without fail or annuals that self-seed so readily one seed packet produces a perpetual crop. Herbs thrive on usage; the more you snip and pluck, the happier they become. Although the plants are rarely showy, a garden that contains herbs and edible flowers such as nasturtium, calendula, and viola is as delicious to look at as it is to harvest from.

Although fresh is best, herbs are easily saved for meals year-round. A little goes a long way, so even a couple of balcony pots will likely produce enough for use throughout the season. Many herb savers dehydrate their harvest, but some herbs, like chives, taste better when frozen.

Breakfast at Tiffany’s (aka the Garden)

It’s early May, and the growing season looks so promising: You’ve weeded beds, added compost, and attached hoses. You’re buying starts and scattering seeds. Your garden looks neat and orderly, the rain’s handling your watering, and after winter’s gray you’re thrilled by the first daff blossoms and garlic shoots.

Fast-forward to late July, and it’s a different story. Your garden has exploded, or perhaps imploded. Weeds threaten to outpace desirables in every corner. Early plants have gone bitterly to seed, and late ones are suffering heatstroke. One day your basil gets a sunburn; to compensate, you overwater and drown your tomatoes. You’ve got 6 activities crammed into every weekend, and your planned garden-fresh dinner is supplanted by takeout. You look out the window, afraid to go deeper into your neglected garden. Cheese and Yogurt

Queso blanco, paneer, whole-milk ricotta, farm cheese, lemon cheese—they’re the same cheese by different names. Even where recipes for them may vary, they share two features: all form curd through the addition of an acid, and all coagulate because they are heated above 176°F, the temperature at which the milk protein casein “sets.” This makes Lemon Cheese, my preferred name because I like to use lemon juice to form the curd, surprisingly simple and easy to make. This recipe is also a great first cheese because you need few special tools or ingredients: just cheesecloth, a thermometer, and ideally cheese salt. You can make about 2 pounds of cheese from a gallon of milk, but I prefer to use some of that gallon to make yogurt.

Winding Down the Year

What a fabulous first Twice as Tasty year! As 2016 ends, I want to briefly look back at what’s been done since the blog’s launch last June and even share a few of the things to come.

This is the 37th post on the blog. Twice as Tasty now includes nearly 60 recipes and some additional 20-plus pages that apply a range of techniques to preparing, storing, and eating well all year. These have been going out each Tuesday to more than 150 email subscribers and Facebook followers. The 40-plus members of the companion Facebook group have been busy asking questions about and sharing the results of their food adventures.

Offline, Twice as Tasty has been feeding concertgoers and yogis, participating in food swaps, trying new recipes and techniques, and taste-testing with friends and family. I am grateful for everyone’s support and participation. And I’m so excited to share more in the coming year. Read more about what’s in store for 2017
